Kaneki regains his memory in chapters 53 and 54 of the Tokyo Ghoul manga, and in the anime in episode 12 of the first season of Tokyo Ghoul. However, it must be pointed out that it is in these episodes that he only begins to restore it, and not entirely, because this begins to be a progressive process.

As mentioned above, these events take place in episodes 53 and 54 of the manga, while in the anime, in the last episode of the first season, both are from Tokyo Ghoul. It all starts with a match between Sasaki and Eto. More specifically, in the anime and manga, they happen when Sasaki fights Eto, and there is a distinct difference between the two. It should be noted here that Haise takes on that other side that he has denied so far, and begins to restore part of his past, but not completely.
During the fight, in which Sasaki does not fight back, he sinks back into his inner world, where he finds a much younger version of himself who asks him to save him. It is here that Kaneki begins to show him parts of his life and points out that his salvation is to sleep and dream happily.

After these revelations, Haise Sasaki falls into a deep sleep, thus giving way to Ken Kaneki, and with him a new identity: the Black Reaper, with whom we see the protagonist with his natural hair color and now with all his power back. It doesn’t take long for him to prove himself superior to Kanae and then go against Shu.
This personality of Kaneki is a bright change from the previous one, showing a cold young man who doesn’t try to be understanding with others and is no longer interested in the suffering of ghouls, but simply getting rid of everything that gets in the way of his goal.
